Ham Macaroni Salad

We are starting Monday off right. I whipped up a new main meal for the girls lunches...ham macaroni salad.

I have been trying to find different ideas to send them with that does not require warming up. My goal is to stay one step ahead of them so they do not get tired of anything.


Ham Macaroni Salad

Prep Time: 15 minutes
Cook Time: 12 minutes
Total Time: 27 minutes

Ingredients:

1 package (1 lb) macaroni or shells
1 1/2 cup mayonnaise
2 tablespoons mustard
1/4 cup sour cream
2 tablespoons vinegar
1 tablespoon sugar
1/2 teaspoon sea salt
ground black pepper (to taste)
1 cup ham steak (cut into small cubes)
2/3 cup frozen peas (thawed)
1 shredded carrot

Optional Ingredients to Mix-In:

cucumbers pealed and diced
celery, chopped
red bell peppers, diced
tomato, diced
dill pickles, chopped

Instructions:

1. Cook macaroni according to package directions for al dente.
2. Once macaroni is cooked, drain and rinse in cold water. After macaroni is cooled, drain well.
3. In a medium sized bowl combine mayonnaise, mustard, sour cream, vinegar, sugar, salt, and pepper.
4. In a large bowl combine macaroni, ham, peas, carrots and other mix-ins.
5. Stir in mayonnaise mixture until pasta is coated.
6. Serve. For storing cover the large bowl and refrigerate up to 3 days.
